When you think of the French Riviera, you might assume that summer is the best time to visit. But Nice has already been a popular winter travel destination since the 18th century, when aristocrats, mostly from England, began spending their summers there.
With mild temperatures year-round (a local told me you can eat out until the end of November, and start doing it again in February), and far fewer tourists than the hordes that crowd the city in August, Nice is really in It peaks in the cooler months. And you don't have to take my word for it: last year, the city Received UNESCO World Heritage recognition as "the winter resort town of the Riviera", referring to Nice's ideal location between the Alps and the Mediterranean Sea.

Castle Hill
Although Nice is stunning on ground level, you haven't properly seen the city until you see it from above. Well worth the relatively short, easy climb up the steep hill for views of the Old Town, the Promenade des Anglais, and the pale blue sea. At the top, you can also explore the ruins of Nice Castle, necropolises, and a stunning man-made waterfall that doubles as an air conditioner in the summer months (stand close and let the mist cool you).
Matisse Museum
Henri Matisse fell in love with Nice in 1917 and moved to the city, where he lived and produced most of his work until his death in 1954. It is therefore fitting that today Nice is home to one of the largest collections of his work. The Matisse Museum In Nice (say five times speed) includes 31 paintings, 454 drawings and prints, 38 vignettes, and 57 sculptures covering the artist's career, drawn largely from his personal inventory, brought in directly from his studio. The wonderful 17th century villa that houses the museum is a bonus.
Saint-Jean-Cap-Ferrat
Leave the city behind for a day trip to Cap Ferrat, a peninsula about 25 minutes outside of Nice that boasts some of the most stunning beaches in the region. Start the day at the popular Paloma Beach, which is surrounded by villas and home to a vibrant, family-run beach club that has been around since 1948. From there, weave your way along the coastal path until you reach Le Club DauphineIt is a swimming club and restaurant located at the tip of the peninsula surrounded by sea views on three sides.
Once you've lazed in the 1930s-era Olympic-size saltwater pool where Brigitte Bardot took swimming lessons, you'll never want to leave. And if so, you can tour the Belle Époque era Grand Hotel du Cap Ferrat, Four Seasons Hotel to book a room for the night. Don't miss the hotel's spa or the Michelin-starred spa le cap The restaurant, which features local ingredients—some from the hotel's own gardens, 600 wines from France's best vineyards, and my favorite cheese cart ever. (Fun fact: in the second season of Emily in ParisWhen Emily headed to "Saint-Tropez," most of the scenes were shot in and around Cap Ferrat; Like Elizabeth Taylor and Angelina Jolie before her, Emily stays in Grand Hotel du Cap Ferrat.)

Le Longoir
At the end of the 19th century, a fishing boat was secured on a rocky shaft off the coast of Nice, where guests ate and drank 20 feet above the sea below. The ship was eventually damaged and removed, but the restaurant, Le Longoir, reimagined and still perched atop those same rocks today. Start with the delicious "The Signature Diving Board" drink (a nod to the restaurant's diving boards), which is like an Aperol Spritz but with peach juice (our server told us George Clooney ordered two rounds when he was there recently), and las on zucchini flower and seafood pancakes.

Les agitatorsSet just behind the city's picturesque port is one of Nice's newest Michelin-star recipients, with reviewers noting its "painfully and skillfully prepared dishes rich in texture, perfectly cooked, and skillfully sweetened." The food is almost too pretty, but it's recommended to eat anyway. Diners can choose from pre-made three- or five-course meals, with wine pairings, of course. If you're having trouble getting a table, you can also visit the grocery-cut-delicacy store to take some takeaway home with you.
Nuances
eating in Nuances It requires you to deeply connect with your senses in order to know exactly what deliciousness you actually taste. That's because the restaurant offers a set "blind menu" that changes every two weeks, meaning you won't know what six courses you're about to serve until you bite into it. And even then, you may not be right. After each turn, the server asks you to take your best guess of the ingredients. The answers are often surprising, but always delicious.
