Snowball Cookies - A sweet mess


Snowball cookies are a fun and delicious seasonal baking project. If you haven't had them before, here's what you need to know: They look like snowballs, have a buttery nutty flavor, and melt in your mouth amazingly!

  • All-purpose flour
  • Pecans (or other nuts)

Snowball cookies contain three key steps to success. First, toast the nuts for maximum flavor. Then, make and bake cookies.

Finally, roll the still warm cookies in powdered sugar for a snowball effect and melt-in-your-mouth flavor. I like to roll them all at once, and after I've rolled them all, I'll roll all over again for maximum icing effect!

Tips for making:

  • Nuts - I love pecans, but sometimes snowball cookies are made with walnuts or other nuts. It's up to your preference (or if sensitivity is an issue). Whatever kind of nuts you're using, give them a good roast before chopping them finely.
  • Roll each dough ball into 2-3 cookie bites. These don't bake for long, so you don't necessarily want oversized cookies.
  • Roll the snowballs in the powdered sugar while they're still warm, and then again. The first coat will melt some (good thing!), but to get that snowy look, you'll need a second coat.

Why did my snowball cakes become flat?

Snowball cakes should not be flat. Since they do not contain a leavening agent, the main factor to check is that the dough is cooled before baking.

Are Snowball Cakes the Same as Italian Wedding Cookies?

They are very similar cookies. Italian wedding cookies are sometimes made with various nuts (such as almonds) and sometimes shaped into a crescent shape before baking.

  • In a dry skillet, toast the walnuts over medium heat until fragrant.

  • Once cool enough to handle, chop it finely.

  • In a medium bowl, mix the flour with the chopped walnuts and salt. sit aside.

  • In a large bowl, mix the cream, softened butter, vanilla extract, and 1/2 cup of the powdered sugar.

  • Add the dry ingredients to the wet and stir until a dough forms.

  • Cover and leave in the fridge for an hour, up to overnight.

  • Roll into balls and place on a baking sheet.

  • Bake at 400 degrees Fahrenheit for 8-10 minutes. The bottoms should start to turn brown.

  • Once cool enough to handle (but still warm), roll them in the remaining powdered sugar. Once you have rolled all of the cookies, rotate each one a second time.

You can substitute pecans for another nut, such as walnuts, depending on your preference.
